Wild mushrooms in particular are available fresh only for very limited periods during the year. Deep-freezing allows us to enjoy them the whole year round. The fungi in question include chanterelles, morels, ceps and fabulous truffles. But even cultivated varieties of mushrooms, such as champignons and shiitake, can be frozen using the IQF method and are thus available everywhere all year round and in high quality.
